Cream of Broccoli Soup
2 servings
1 stalk broccoli (half of the bunch of broccoli)
1 small zucchini
1 small parsnip
1/2 Hass avocado
1/2 lime (lemon) juice
1 clove garlic
1 spoon of olive oil
sea salt and black pepper to taste
Optional:
few white grapes for sweetness (I put it)
cilantro and/or parsley for garnish (I skip it)
Put all ingredients in a blender, add water (you can use lukewarm water in winter) and blend till smooth.
Presentation: Make a circle on top of the soup in each plate with some nut milk. (The soup is very creamy but made without a nut milk!)
Optional: Garnish with chopped up broccoli flower heads, cilantro or parsley (I don't, but some people may like it).
