Orange Sweet Potato Soup

Serves 2

1 medium orange sweet potato washed and chopped into large chunk
2 carrots pealed and cut into chunks
1/8 butternut squash pealed and cut into chunks OR
1/2 parsnip pealed and cut into chunks
2 Tbs. fresh ginger chunks (size of a walnut)
Juice of 1 lime
1 Tbs. olive oil
Salt and black pepper to taste
1 cup carrot juice (juice 1 pound of carrots, ca. 6 carrots, in a juicer)

OPTIONAL: 
1/2 green chili pepper (to make it spicy)

Blend thoroughly in a blender until smooth. You may need the Vitamix for this one.
You can warm this soup up to 105% if you need it warm, or just serve it in warm plates at the room temperature.

Sweet potatoes pack a nutritional punch you can feel for hours after enjoying their comforting, smooth flavor. They are rich in the antioxidant beta carotene, potassium, fiber, and vitamin C. They help to cleanse and detoxify the body and can boost poor circulation.  (Keep the skin on if it's organic!)
