Indian Spinach

Palak or Saag (without Paneer)

1 1/2 cups tightly packed spinach
1 green onion (or large scallion, sweet onion)
juice of 1/2 lime (or lemon)
3 Tbsp olive oil
2 Tbsp sesame seeds, soaked 2 hours (or tahini)
1 tsp mustard seeds powder
1 tsp cumin powder
1/2 tsp coriander powder
1 tsp coarsely ground black pepper OR
1 green chili pepper
1/3 cup fresh cilantro leaves

Combine all ingredients in a blender or food processor and whir until smooth.

Garnish with fresh coriander (cilantro) leaves.
Sprinkle some chopped fresh tomatoes.

Optional (add in a blender for spicy version):
1 clove garlic
1 small piece ginger
1 tsp garam masala
1 tsp turmeric
1 tsp red chilli powder
4 cashews, soaked for one hour
